I know I know everyone and their moms are talking about how gorgeous it is outside, so I won’t talk about that. Instead, I will share with you a life changing discover Chris and I had a couple weeks ago.
Disclaimer: we may not be that smart, and maybe people have been doing this for ages and questioning why we haven’t, BUT either way it’s amazing.
So what is it?
Long story short: a couple weeks ago, we had just done Insanity and really wanted a smoothie, but PROBLEM we realized we didn’t have any milk or juice (ok, we never have juice). Anyway, we don’t have any liquid to make our smoothie go round. So we were crushed, and started making eggs (because of course eggs are still awesome), UNTIL we discovered we had a few lingering grapefruits in the drawer of the fridge, that were a bit past their prime. So, naturally, we sniffed them (they passed the test) and then proceeded to squeeze them into the blender with frozen fruit and yogurt.
The Result: perfection.
And fast forward to the present day, where the obsession is still strong.
Sunshine in a Cup/Grapefruit Berry Smoothie
Makes 1 Smoothie
- 1/2 frozen banana
- 1/4 cup frozen blueberries
- 1/4 cup frozen raspberries
- 1/4 cup frozen strawberries
- handful of frozen mango chunks
- 1/4-1/2 cup plain greek yogurt
- juice of 1 large grapefruit (cut in half and squeezed)
Place everything in a blender and sit back and watch the magic happen!
It is soo refreshing, using all frozen fruits makes into a semi fro yo type indulgence. And the grapefruit juice just adds a certain pop of citrus to the sweetness of the berries! This is a great spring/summer treat.
