Now this is a quasi-Faith Friday, and here is the long back story why! So in the Catholic Church we do meat-less Fridays, and especially during lent, when we were growing up my dad would whip up these waffles for our dinner. So clearly that makes sense to all of you that they are holy waffles! But for real, these waffles are famously delicious and just waiting for you to try them!
Now this is a top secret family recipe that my dad has made for us growing up. Recently he tried using gluten-free bisquik to cator to his wonderfully needy gluten-free daughter. And many people were skeptical that he was changing THE waffle recipe that he has been making for FOREVER. However, the result was amazing. Gluten-free and gluten-eaters alike agreed that these waffles will blow your mind with only one bite of this light and crisply perfect waffle. So pay attention closely.
Here are the ingredients:
-1 cup Gluten-Free Bisquick (or regular for those that aren’t gluten-free)
-1 cup cottage cheese: the SECRET ingredient
-1/2 cup oil
-1/2 cup water
-may add a couple tablespoons of wheat germ if you are not gluten-free for extra texture.
1. Plug in waffle iron, and while it is heating, find your blender and mix in all the ingredients, in the order they are listed.
2. Blend like crazy
3. Vegetable spray the waffle iron
4. Pour the batter in the middle of the iron, cook, and ENJOY!
I also love topping these waffles with nutella and banana…sooo good!
